Lightly grease a baking sheet pan with olive oil or avocado oil. Add sausage links, or patties, trying to make sure they don't touch, or not much.Make sure that the pan size correlates to how many sausages you are cooking. A standard "half sheet" baking pan will hold 6 packages of sausage links. (If you're feeding a bigger crowd, fine to use two pans, and double the oil so you have enough to grease each one.)
Bake in preheated oven 13 to 15 minutes total. At about the 10 minute mark, shake the pan carefully to turn most of the link sausages, or remove the pan from the oven, and use two forks (or similar) to rotate/flip each sausage. Bake the additional 2 to 5 minutes until browned and sizzling.CHICKEN AND APPLE VARIETY: See Notes below for cooking time.SAUSAGE PATTIES: See Notes below for cooking time.NOTE: To create extra-brown crispy exteriors, do not shake the pan or rotate sausages quite as soon. Wait until the 12 minute mark before rotating. The bottom of each sausage (that's touching the oil and the pan) is what gets crispy first.
