  1. Bring the water to a gentle boil in a small saucepan over medium heat. Add the thyme and ginger. Reduce heat to low. Cover and simmer for 10 minutes.
  2. Remove from heat and strain. Serve immediately or allow to cool. Can be served chilled and/or iced.
