2 cups walnut halves and pieces
1 large egg white
1/3 cup light brown sugar
1 teaspoon vanilla extract or vanilla bean paste
1/4 teaspoon cinnamon

Preheat oven to 350 degrees.
In a medium bowl, mix together the nuts, egg white, sugar, vanilla and cinnamon until well blended.
Spread the nuts on a baking sheet lined with parchment and bake in the oven for 10-15 minutes.
Transfer the baking sheet to a wire rack to cool completely.
Break the nuts apart and store in an airtight container for up to 7 days.
