You asked for a recipe on repeat at my house, so here’s a quick and easy one that everybody loves. My “Race Cookies” are packed with yummy & healthy ingredients (+ delicious chocolate chips!). The perfect apres-lunch sweet treat, and the fuel my team craves to keep the energy going during the long winter ski race season (hence the name). And if I’m racing out the door in a morning hurry I like to slather ‘em up with peanut butter for some on-the-go energy! Here’s the full recipe so give ‘em a try and let me know what you think! 

RACE COOKIES 👩🏻‍🍳

In a food processor or blender puree the following:

- 2 bananas 
- 3 eggs 
- 1 stick of butter 
- 1 cup applesauce, unsweetened 
- 1/2 cup brown sugar 
- 2-3 tsp cinnamon 
- 2 tsp vanilla 
- 1 tsp baking soda 
- 1 tsp salt 

In a large mixing bowl combine all dry ingredients below, and then stir in wet ingredients:

- 3 cups oats 
- 1 cup all purpose flour 
- 1 cup raisins
- 1/2-1 cup dark chocolate chips 
- 1/2 cup hemp hearts
- 1/2 cup chia seeds
- 1/2 cup ground flaxseed
- 1/2 cup almond flour
- 1/2 cup unsweetened coconut 
- 1/2 cup pumpkin seeds (optional)

Line a baking sheet with parchment paper, spoon onto sheet and press with a fork. 

Cook for about 15 minutes at 350°
