Jeff Matherly on 2025-03-21 (5 stars): I don't know why we haven't been able to find proper sushi rice but I used Calasparra (Spanish paella rice) without washing and it came out fine. I think the timing and use of "Seasoned" rice vinegar did the trick. And letting it cool down to room temp was an obvious but helpful tip.
Beax asked for tips on rolling sushi (with a mat I presume). I used the larger "shiny" nori sheets that you picture in the Homemade Sushi page and I found that it is indeed a little delicate but was manageable and stuck together well if I misted it with water from a spray bottle. Also, putting the mat in a one-gallon zip-lok bag makes rolling and cleanup a breeze.
Thanks!

Laura on 2025-02-23 (5 stars): This recipe and all the information you’ve provided is amazing!! I have wanted to make sushi at home for years but was worried about which fish to use and that everyone would get sick.. Your article gave me the information I needed in a simple format and it turned out sooooo good!! Everyone loved it, it was easy to make, and just as good (if not better bc we got to eat as much as we wanted 😋) as from a restaurant. I do want to try using salmon next time, but I’m still nervous about it. We used ahi tuna this time and wow, just wow! Thank you so much! I will be looking for more of your recipes in the future.
