1,280 likes, 104 comments - annasfamilykitchen on November 1, 2022: "Stroganoff Whether you go for the mushroom, beef or chicken stroganoff recipe, this is a quick and easy meal to knock up. Slightly retro, yes, but my spin on the classic recipe offers a great midweek meal solution. Here are my recipes for all three options. Let me know which one you’d choose. Chicken or Beef Stroganoff INGREDIENTS for 4: 2 tbsp olive oil 500g chicken breasts or beef steak (fillet is a real treat, Bavette or Rump are kinder on the purse) cut into strips 1 tbsp seasoned flour 1 tsp paprika 1 onion, sliced 3 cloves of garlic, crushed 1 tsp Dijon mustard 200g chestnut mushrooms, halved 200ml chicken or beef stock 4 tbsp soured cream 2 tbsp chopped fresh parsley & chives to serve Method:- Heat 1 tablespoon of the oil in a pan. Toss the chicken or steak in the flour and paprika, then add to the pan. Colour for 5 minutes then remove from the pan and set aside. Cook the onion and garlic in the same pan, allowing them to colour for a couple of minutes before adding the mustard and mushrooms. Cook for a further 2 minutes then add the stock. Let it bubble and reduce for a minute. Return the chicken or beef to the pan and stir through the soured cream. Finish with the fresh parsley. For the mushroom (vegan) version:- INGREDIENTS for 4:- 3 tbsp coconut or olive oil 2 onions, chopped 4 cloves of garlic, crushed 1kg chestnut mushrooms, roughly chopped Salt and pepper 800ml coconut milk 2 tsp Dijon mustard 2 tsp paprika 1 lemon, juiced 2 tbsp chopped fresh parsley Method:- Heat a large casserole and add the oil, onions, garlic and mushrooms. Season well with salt and pepper. Cook on a medium heat for 5-10 minutes, stirring every minute or so. Add the coconut milk, mustard, paprika and lemon juice. Stir and cook on a medium heat for a further 20 minutes until the sauce thickens and reduces by half.
