2,782 likes, 78 comments - frederikbillebrahe on April 3, 2020: "BLUEBERRY RICOTTA TOAST So a good proposal for your weekend is to drop by your local bakery and buy a heavenly sourdough loaf and make someone special a blueberry, ricotta toast - as we did @apollo_bar This dish came to me when I just had opened Apollo Bar - we really needed a dish that people would remember that was super simple to do - and since sourdough was one of our staple products (originally made by @jespergotz ) we did a sweet dish using the bread inspired by the delicious toasts that @prosciuttosnacks does at her restaurant sqirl in LA. My version reflects my flavour preferences - with a drizzle of olive oil, salt and lemon thyme as a counterpoint to the sweetness of the blueberries marinated in blueberry jam - and a nice ricotta cream made with local ricotta from @latrecciadk It was a big hit - not just because it’s photogenic :) it’s a wonderful and healthy snack that works for breakfast, brunch or lunch and as a dessert Recipe Jam 125 g fresh organic blueberries 1 tablespoon white sugar 3 sprigs of lemon thyme 1 tablespoon water Rind of 1/3 organic lemon Put everything in a small pot and bring to a quick boil - cook until the berries dissolve and then jam thickens – leave until serving Ricotta cream 4 big tablespoons ricotta 1 tablespoon whipping cream 1 teaspoon white sugar A pinch of salt A little lemon zest Whisk everything together in a bowl - please taste as the ricotta may vary in flavour and texture - the cream should have the texture of a Greek yoghurt and be just slightly sweet To assemble: 125 g blueberries Blueberry jam 2 - 4 slices of sourdough bread Ricotta cream Lemon zest Olive oil Lemon thyme Toast your bread so it’s nice and golden, spread ricotta cream on the top surface, add blueberries and jam mixed 3 parts fresh berries to 1 part jam - finish with a drizzle of olive oil, lemon zest and lemon thyme 💙 enjoy".
