The idea was to develop a roll with a light crispy exterior and a soft interior with a small amount of chew. The dough should be very easy to work with—that’s my goal with every dough recipe I release. It’s not finicky, and it’s certainly not sticky, if the recipe is followed precisely. Thanks to everyone who tested this recipe and gave feedback.
