But he made it more Chinese instead of Northern, probably because of his Cantonese heritage. In time we leaned into the differences and veered off course so far into basically a new type of flavortown. No doubt does his palate influence mine even still today. It’s the palate of a working class Chinese man who longs for the food of his country, which makes sense because my grandfather was a Chinese dock worker from Canton who landed in Bangkok and became a carpenter. (My dad still mainly uses thin soy, white pepper, and sugar at home now.)
