6,427 likes, 79 comments - rootedinspice on May 6, 2021: "Khichdi is comfort food, its the first solid food many of us ate as babies, its nourishing, and it's actually so flavorful - if you make it right!! This is one of my family's khichdi recipes with a few adjustments based on how I like it. Quick video up on my Reels 🎥 Also adding below the blend of five lentils I like to make and store in a jar so it's ready to go whenever I want khichdi (but you could totally just use 1 or 2 lentils that you have on hand!) Khichdi Lentils Blend: - 1 cup split green moong - 1 cup arhar/toor (aka yellow split pigeon peas) - 1/2 cup masoor (aka red lentils) - 1/2 cup split yellow moong - 1/2 cup split white urad (aka white lentils) Recipe below serves about 3-4. (And it doesn’t fit in the caption 😔 so steps 4-8 are in the comments!) // INGREDIENTS // - 1/2 cup khichdi lentils blend (or whichever lentils you have on hand), rinsed well - 1/2 cup basmati white rice, rinsed well - 4 cups of water (+/- based on preference) - 1 small red onion, finely diced - 4 garlic cloves, minced - 1/2 inch ginger, grated (optional) - 3 green chilies, finely chopped (+/- based on heat preference) - 1 large tomato or 2 medium tomatoes, diced - Fenugreek leaves (I used frozen - one block) - Chopped cilantro to garnish Extra Vegetables (you can add anything else - spinach, carrots, etc): - 1 cup frozen peas, rinsed - 2 small potatoes, quartered - 1 tbsp ghee or oil (if you're not vegan use ghee for khichdi always!!) - 1/2 tsp cumin seeds - 1/8 tsp of asafoetida aka hing (you can add more but a pinch goes a long way) - 1/4 tsp turmeric - 1/4 tsp red chili powder (+/- based on heat preference) - Salt to taste - 1/2 tsp sumac (optional but highly highly recommend) // RECIPE // 1️⃣ Rinse your lentils and rice together well until the water runs somewhat clear. Then let them soak in some water for 15 minutes while you prep your other ingredients. 2️⃣ To your Instant Pot / Mealthy on the "sauté" setting, get your ghee hot and then add cumin seeds. Once you see them "dancing" around, add onions and sauté until very translucent (about 4 min). 3️⃣ Then add garlic, green chilies, ginger if using, and sauté for another couple min.".
