544 likes, 10 comments - reecehignell on February 18, 2023: "Plant based Lamington recipe 70g vegan butter, melted 1/2 cup sugar 1 tbsp vanilla bean paste 150ml soy milk 1 cup self raising flour Chocolate Dip 1/4 cup cocoa powder 3 cups icing sugar 1/2 cup of boiling water Jam (raspberry is my choice) desiccated or fine shaved coconut 1 - Preheat your oven to 170C and grease + line a 20cm by 30cm baking tray 2 - Mix your batter together as per the video then cook the cake 3 - Prepare your chocolate dip then strain through a fine sieve. 3 - Cool your cake to room temperature then cut the sponge into halves then cut . Spread jam over one layer of sponge then sandwich the second layer on top. Cut your sponge into 7cm by 14 center fingers. 5 - Dip, dip rest then coat with coconut!
