Basic recipe: 2 cups water 1 cup vinegar (any vinegar works here) 1/2 cup sugar 1/4 cup kosher salt I also added bay leaves, coriander seeds, and mustard seeds. Try peppercorns, allspice berries, star anise, cumin seeds, garlic cloves… I find whole spices are best here. Bring brine to a boil. The pour over raw veggies in a clean mason jar. Label and store in the fridge, depending on what you are pickling the length of time it is good for in the fridge changes.
