Teresa on 2025-03-22 (5 stars): This was delicious, I did add sautéed chopped onion and garlic to meatloaf and spread a layer of catsup on top before baking. My non-vegan diners loved it!
Stephany on 2025-03-11 (5 stars): Delicious! I've been craving old fashioned meals like I had growing up, and this fits the bill. Just like my mom used to make. I took the advice of step 5 in instructions with ketchup, as that's what I'm used to, which I think put it over the top. I did end up baking for 35 minutes as the 30 made it a little under done for my tastes, but that could just be my oven's fault (it's old). But I'll definitely make again, thank you!
Shelley on 2025-02-19 (5 stars): My husband always eats the portion we plate. He asked for a second serving on this recipe. He is an extreme foodie.
I must admit this is a huge compliment to this recipe. I made it just as it is written. YUM!
Tina on 2025-02-18 (5 stars): This was delicious! And very easy! This will be my go-to recipe from now on. My boyfriend was very impressed, he liked it even better than the beef meatloaf I usually make!
Jackie on 2024-09-28 (5 stars): It was great, thank you! I doubled the recipe so we had enough and turned out great.
Christina on 2024-08-04 (5 stars): Love that this recipe is simple and tastes good. Thank you for sharing!
Ly on 2023-10-29 (5 stars): I haven’t had meat loaf even long before I went plantbased and was really craving it. This recipe came out soooo good. I doubled the recipe and also for the sake of budget, I used savory Impossible sausage ground instead.
Karen ML on 2023-10-02 (5 stars): I can’t count how many times I’ve made this recipe. It’s foolproof and delicious!! Thank you!!
Betty on 2023-08-28 (4 stars): I had the same problem with the bottom of mine as well.
I've considered cooking on parchment paper on a rack on a sheet instead. I hope this allows it to cook more evenly all the way around and eliminate the hard bottom.
Marla on 2023-06-22 (5 stars): Perfect hot or cold!
Tricia on 2023-02-01 (5 stars): Just made it and it was fantastic! Thank you for the great recipe!
Katyana on 2023-01-15 (5 stars): This was so good. I doubled it but didn't change anything else. Served with L/O veggie croquettes and salad.
Marilu on 2023-01-09 (5 stars): Really tasty vegan meatloaf! This recipe was incredibly simple to make and deliciously paired with mashed potatoes and vegan mushroom gravy. Yum!
Cindy T on 2022-12-31 (5 stars): This Vegan Impossible Meatloaf was tasty and easy to make. Next time I make it, I will add chopped onion and maybe some other chopped veggies to the recipe. Also, the bottom of mine was a little too hard. How can I prevent that?
Andrea on 2022-12-24 (5 stars): This recipe has become our go-to for holiday dinners. It's the perfect comfort food for Christmas eve. Thank you!
