1 teaspoon honey or maple syrup
½ teaspoon sea salt
Freshly ground black pepper
Chopped fresh parsley (for garnish)

Preheat the oven to 425°F and line a baking sheet with parchment paper.
In a large bowl, toss the carrots with the olive oil, honey, salt, and several grinds of pepper.
Transfer the carrots to the baking sheet and spread in a single layer. Roast for 15 to 25 minutes, or until fork-tender and lightly browned but not mushy. The timing will depend on the size of your carrots.
Remove from the oven and season to taste. Garnish with parsley and serve.

However, heating honey at high temperatures does degrade beneficial minor compounds (enzymes, antioxidants, volatile compounds) and increases chemical changes (like HMF formation).
The risk of “toxicity” from typical cooking with honey is very low, and the sugars remain usable.
Your cautious approach (adding honey toward the end) is a good compromise to preserve more of honey’s delicate qualities while still enjoying honeyed roasted vegetables.

But I like ginger and honey with my carrots, so as the carrots were cooking, I used the leftover honey in the bowl I used to coat the carrots, and added fresh ginger to it. When the carrots came out, I coated them with the ginger/honey mix. I have also used powered ginger, but fresh is best!
