1 pound fresh strawberries
1 1/2 cup granulated white sugar
2 tablespoons lemon juice
½ teaspoons lemon zest (optional)

Wash and slice the strawberries, removing the hulls and green tops.
Add them to a saucepan, and mix the sugar in well.
Stir continually over medium heat, and bring the strawberries to boil.
Once boiling, add the lemon juice and zest (if using).
Boil for about 15 minutes, or until the jam reaches 220F.
Stir often, to make sure the jam doesn’t burn.
Pour into a jar and allow to cool.
Cover and refrigerate.
Use within about 2 weeks (if it lasts that long).

Bonny on 2024-06-09 (5 stars): This was my first time making any sort of jam and it turned out amazingly! The farm near my house had overripe $2 quarts of strawberries for sale, so I figured this would be a perfect time to give jam a try.
I reduced the 1.5 cups of sugar to 1 cup of sugar due to the increased sweetness of overripe strawberries and it was a perfect adjustment (I prefer sweet things). I also noted people commented issues achieving the 220 temp in 15 minutes so I utilized a stainless steel pot instead of a non stick and I heated with my power burner at medium vs a smaller one. It took the full 15 minutes to achieve 220, but it got there as the mixture was reduced to the point of no excess water. Of note, I have gas burners which I’m sure contributed to the quicker temp.
I will absolutely make this again! I think next time I’ll try half sugar plus half Splenda. If anyone has tried Splenda in place of sugar, please I’d love to know what you thought of the final product.
